[Recipe] Apple Pie (Made with 4 Easy to Find Ingredients)

We have a lot of apples at home because I don’t like eating apples

Let me break that sentence down a bit more:

Because I don’t like eating apples (in comparison to other fruits), I just leave them sitting there. I often find them too sweet and too big.

BUT >>> They are perfect for apple pies!!

Mmmmm… (It won’t look quite like this though)

Let’s begin –

Ingredients:

  • Apples (I used one green and one red)
  • Sugar (any sugar would do. I used one spoon of white sugar and another spoonful of Cardamom Pistachio Sugar from Gewurzhaus. The cardamom sugar is pretty much three-in-one sugar with the spice perfect for apple pie baking)
  • Lemon Curd (Yackandandah hand made Lemon Curd)
  • Puff Pastry – 2 Sheets for one apple pie (I used Pampas fat reduced puff pastry)

1. Wash the apples and if you feel safe enough - leave the skin on

3. Follow the instructions on the Pampas puff pastry box and prepare one sheet of pastry onto the baking paper

4. Spread the lemon curd onto one side of the pastry.

5. Pile the apple slices on!

Make sure that you prepare the pastry on a baking tray – and don’t forget the baking sheet like I did!

6. Sprinkle those candy particles!

More like... Cardamom, pistachio bits and brown sugar.

In this case, they are Cardamom, pistachio bits and brown sugar.

I have also added some white sugar for that caramelisation.

Preheat oven to 220C for conventional oven, and 220C for fan forced oven.

7. Cover it up with the other puff pastry sheet, fold the edges and slice the top open so that the apples gets baked through. You don't necessarily HAVE TO slice the top but I prefer to, I will explain why later in this post.

The apple pie with open cuts – it turned out to be a flat pie with no leaks

The apple pie with no open cuts - very puffy. BUT, the sugar syrup leaked out from the sides of the pie and made a mess in the baking tray.

The apple pie with no open cuts turned out very puffy and crusty. BUT, the sugar syrup leaked out from the sides of the pie and made a mess in the baking tray. It would be easier to clean if I had remembered to use baking paper.

Although I was very happy with the flavour and texture of the apple pies, I need to ensure that I remember to use baking paper in the future! Another fact is that the fat reduced puff pastry doesn’t puff up as well as the original pastry, hence the pie doesn’t taste as rich. Is it worth the compromise? I will leave that for you to decide. =]
