We have a lot of apples at home because I don’t like eating apples
Let me break that sentence down a bit more:
Because I don’t like eating apples (in comparison to other fruits), I just leave them sitting there. I often find them too sweet and too big.
BUT >>> They are perfect for apple pies!!
Let’s begin –
- Apples (I used one green and one red)
- Sugar (any sugar would do. I used one spoon of white sugar and another spoonful of Cardamom Pistachio Sugar from Gewurzhaus. The cardamom sugar is pretty much three-in-one sugar with the spice perfect for apple pie baking)
- Lemon Curd (Yackandandah hand made Lemon Curd)
- Puff Pastry – 2 Sheets for one apple pie (I used Pampas fat reduced puff pastry)
You will need awesome apple slicing skillzzzz
Make sure that you prepare the pastry on a baking tray – and don’t forget the baking sheet like I did!
Preheat oven to 220C for conventional oven, and 220C for fan forced oven.

Although I was very happy with the flavour and texture of the apple pies, I need to ensure that I remember to use baking paper in the future! Another fact is that the fat reduced puff pastry doesn’t puff up as well as the original pastry, hence the pie doesn’t taste as rich. Is it worth the compromise? I will leave that for you to decide. =]
